Stuffed vegetables

Serves: 6 people

Preparation: 5 minutes

Cooking: 15 minutes

Total time: 20 minutes.


1 red capsicum

1 big zucchini

2 big mushrooms

200 gr minced beef

1 onions

2 garlic cloves

2 tomatoes

1 handful baby spinach

a pinch of sea salt

1 teaspoon of rosemary

1 teaspoon of thyme

2 tablespoons of fresh mozzarella


Preheat the oven at 180 degree

Cut the capsicum and zucchini in their length, clean the seeds from capsicum

Dispose them in a baking dish, use a spoon to dig hole n zucchini and mushrooms (do not cut through the bottom part!)

Mix those mushroom and zucchini flesh with meat, chopped onions, chopped spinach, diced tomatoes, herbs, salt, crushed garlic (you can add pine nuts )

Stuff each vegetables and top it up with cheese (mozzarella or goat cheese)

Cook for 15 minutes and serve.



You can serve with wild rice, for a vegetarian version replace minced meat by 2 beaten eggs or a mix of rice and lentils.

Drink water or a glass of chinon

Red capsicum is an amazing antioxidant, rich in vitamin A it’s eye protective and adding onions and garlic plus divers herbs makes it a good blood tonic. Mediterranean food at its best!
