20 to 25 small rolls

750 gr of plain flour

35 gr of fresh yeast

1 egg

60 gr brown sugar

120 gr unsalted butter

1 teaspoon of sea-salt

300 ml milk

1 small tablespoon of cardamon

For the cream:

100 gr soften butter

50 gr brown sugar

2 tablespoon of cinnamon or chocolate powder

or a good quality jam

to finish: 1 egg and granulated sugar.



Mix the yeast with some milk

Melt the butter on low heat and add to the milk.

Add 1 egg, flour, sugar, salt and cardamon. Mix for 10 minutes in a food processor.

Let it raise for 30 minutes under a humid cloth.

Roll the dough into a long rectangle of 3 cm thickness.

Mix butter, sugar and cinnamon (or chocolate powder) and spread on the dough (or jam)

Roll in its length and cut into about 25 little rolls

Put in individual muffin paper  dish, the cut part facing up and down

Reserve under the cloth till volume doubles

Preheat the oven to 220 degres

Brush the rolls with a beaten egg mixed with water and add a pinch of granulated sugar

Cook for 5 minutes.



You can use jam, nuts, other spices, just use your imagination and create different spread! Drink a hot wine or spiced chocolate with it.
