50 gr Bacon
100 gr Mushroom
20 cl thick cream
1 garlic clove
1 tablespoon olive oil
Parsley and herbs of your choice
Fry diced bacon, crushed garlic and sliced onion in olive oil
Add sliced mushrooms and herbs
Whisk eggs and cream till foamy
Pour on top of bacon mushrooms
Cook on medium heat and draw a eight with a wooden spoon till the omelette is cooked (I love it runny)
Fold and serve with a green salad
You can add grated comte or gruyere if not on a diet.
Drink a light red wine like chinon or bourgueil.
