Moringa fish fillet

Serves: 6

Ingredients

6 sole filet (small or diced in cubes)

6 tablespoon of moringa leaves (or baby spinach)

3 eggs

50 gr of corn flour

6 tablespoons of bread crumbs

2 tablespoons of sunflower oil (or any oil with a high smoking point)

Cracked pepper

Directions

Mix eggs, corn flour, bread crumbs and moringa leaves.

You can season with salt and pepper. (I do not as fish is already salty)

Heat a frypan with oil.

Dip small pieces of fish in the moringa batter and fry.

Cook both sides till golden brown.

 

Notes

Perfect with steamed vegetables or a salad, use any type of white fish you like.

Drink lemon water or a nice sauvignon blanc.

Moringa leaves add antioxidant property to a dish already high in essential nutrients. Rich in potassium, calcium, vitamin A as well as the good nutrients from the fish makes it an ideal meal for a family dinner.
