Banana muffins with strawberry compote

Ingredients:

2 ripe bananas

1 cup buckwheat flour

2 tablespoons of brown sugar (optional)

1 cup almond meal

2 eggs

40 gr unsalted butter

1 teaspoon raising powder

Directions

Preheat the oven at 200 degrees

Mash the bananas and mix with flour, almond meal, melted butter, sugar, raising powder and eggs

Pour in six individual silicon muffin dish

Add a good teaspoon of homemade strawberry compote in the middle

Cook for 10 minutes

Comments

Great treat for kids ! high in fibres they are easy on the digestive system. For dairy free, use coconut oil or sunflower oil instead of butter.
