Cauliflower and kale coated chicken breast

Serves: 4 people

Preparation: 10 minutes

Cooking: 20 minutes

Total time: 30 minutes.


1 red capsicum

1 onion

2 tomatoes

1 cup of cauliflower

1 cup of kale

300 gr of chicken breast

a pinch of sea salt

2 tablespoon of olive oil

1 tablespoon of fresh goat cheese


Mix cauliflower and kale in a food processor (to get same texture than bread crumbs)

Coat the chicken breast with the vegetables crumbs and place in a baking dish

Sprinkle with olive oil and bake in a medium hot oven for 20 minutes

During this time cook diced capsicum, diced onion and diced tomato wit a bit of olive oil till tender.

Present the chicken on the the tomato salsa with goat cheese on top.


You can play with other vegetables like carrot and broccoli and change for fish, just an easy way to add more vegetables to your dinner!
