Apple sauce

Serves: 6
Preparation: 10 minutes
Cooking: 15 minutes
Total time: 25 minutes


1.5 kg of apple (any type, you can even use the damaged ones that no-one want to eat)

50 gr of custard sugar or less (I do not use sugar)

Choice of :

1 vanilla bean

1 teaspoon of cinamon

1 lemon zest or 1 orange zest

1 small tablespoon of olive oil

Sea salt and cracked pepper


Peel, remove the core and dice all apples.

Cook in a big sauce pan with 5 Cl of water, sugar and vanilla pod (or one of the other choice)

Stir till soft.

Remove the vanilla bean.

You can mash it with the spoon or in a mixer for a smoother result.



Serve cold or lukewarm. You can use it as pie filling. You can do the same with any fruits you like!

You can freeze it, preserve it or just keep in the fridge and enjoy it!

This highly energetic dessert is rich in different fibre which slow down the process of glucose absorption. Rich in vitamin c and pectine another fibre that contribute to lower artery damages.
